CREAMY POTATO SOUP WITH PINE NUTS USING KOITA COOKING CREAM
Meet our favorite Potato soup recipe. It’s super creamy (thanks mostly to the Potato and with the help from Koita Cooking cream) yet plenty satiating, too.
And you know what? It even tastes better the next day!! So make it ahead of time or have leftovers this soup is your best bet with the most basic ingredients from the pantry!
INGREDIENTS
- 500gm potato (boiled)
- 1 medium onion (diced)
- 1/2 tsp cardamom powder
- 2 tbsp pine nuts
- 50 gm unsalted butter
- 600 ml vegetable broth
- 1 pack (200 ml) Koita cooking cream
- Salt and pepper to taste
- toasted pine nuts and cream for garnish
DIRECTIONS
- Peel the potatoes and into the same size and bring to boil until cook
- Melt the butter in a pan (under medium heat) and sauté the onion and pine nuts. When the onion soften, pour in the vegetable stock and add the boiled potatos
- Add the olive oil while seasoning with salt and pepper according to your taste
- Let it boil for few minutes to infuse the flavors
- Use a hand blender to smoothen the texture
- Then add Koita Cooking cream and stir well
- Garnish with cream and toasted pine nuts and serve warm and let this wholesome soup comfort your soul!
