Banana Protein Pancake
INGREDIENTS
- 1 ripe banana
- 2 large eggs
- 1/4 cup Koita Organic Whole Fat Milk
- 1/4 cup protein powder (vanilla or unflavored)
- 1/4 teaspoon baking powder
- Pinch of salt
- Butter or coconut oil
- Fresh fruits
- Honey
- Greek yogurt
DIRECTIONS

Mash the banana:
In a medium bowl, mash the ripe banana until smooth. -
Mix wet ingredients:
Add the eggs and Koita Organic Whole Fat Milk to the mashed banana. Whisk until well combined. -
Add dry ingredients:
Stir in the protein powder, baking powder, and a pinch of salt. Mix until you get a smooth batter. -
Heat the pan:
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. -
Cook the pancakes:
Pour small amounts of batter (about 1/4 cup) onto the hot pan. Cook for 2-3 minutes until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown. -
Serve:
Stack the pancakes on a plate and add your favorite toppings like banana slices, fresh berries, or a drizzle of honey.
