Banana Protein Pancake

INGREDIENTS

  • 1 ripe banana
  • 2 large eggs
  • 1/4 cup Koita Organic Whole Fat Milk
  • 1/4 cup protein powder (vanilla or unflavored)
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • Butter or coconut oil
  • Fresh fruits
  • Honey
  • Greek yogurt

DIRECTIONS

  1. Mash the banana:
    In a medium bowl, mash the ripe banana until smooth.

  2. Mix wet ingredients:
    Add the eggs and Koita Organic Whole Fat Milk to the mashed banana. Whisk until well combined.

  3. Add dry ingredients:
    Stir in the protein powder, baking powder, and a pinch of salt. Mix until you get a smooth batter.

  4. Heat the pan:
    Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

  5. Cook the pancakes:
    Pour small amounts of batter (about 1/4 cup) onto the hot pan. Cook for 2-3 minutes until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown.

  6. Serve:
    Stack the pancakes on a plate and add your favorite toppings like banana slices, fresh berries, or a drizzle of honey.
